You've sampled every frothy confection from here to Timbuktu, you've reviewed portfolios, gathered references and even hit it off with a baker or two. Bottom line is, you've found the perfect cake designer -- so perfect, in fact, you're ready to give her the thumbs up. Here's what to do next:

Make It Official: About six to eight months before your wedding, give your favorite cake designer the sweet news and send in your deposit to save the date.

Eat Well: Select the wedding cake flavor, as well as the flavors of the icings and fillings. Now's the time to conduct that buttercream vs. fondant taste test, take the mocha/coconut challenge, and finally put the chocolate vs. vanilla controversy to rest. Have fun!

Extra-Extra: Now is also the time to decide if you'll need your designer to create a groom's cake, too. The southern-bred groom's cake is usually smaller, more dense, richer (oh double-chocolate-mousse-with-extra-creamy-mocha baby!) and is often baked in a fanciful design.

Make The Final Decisions: Considering your menu, type of gala, time of day, wedding season and personal style, make the final selections on flavors, fillings and frosting for your towering treat.
