High-end Ingredients: Above all, brides today are focusing on excellence, says Sylvia Weinstock, wedding cake designer to the stars. “[They’re] getting to be demanding in terms of excellent flavors, the best ingredients, and the finest chocolate,” she says.

Creative Designs and Textures: Aside from great all-around wedding cakes, extensive patterns and designs on cake surfaces in addition to stacked layers are popular choices for modern brides. Weinstock notes that brides today want their cake design to aesthetically match the pattern and style of their wedding dress.

Colors and Flavors Based Around the Season: Weinstock notes most color trends tend to depend on the wedding’s style and season. “In the winter, brides like white; in the summer, they like color; in the fall, they like jewel tones like bright oranges to bring on the harvest feeling,” she says. And flavors can reflect the season as well -- rich tastes strike a chord with winter brides, while a light and fruity cake pairs well with a summer affair.

Bottom line: “Quality never goes out of style,” Weinstock says.
